This Florence Tomato Sauce is a testament to the beauty of simple, high-quality ingredients. Ingredients:

  • For the Sauce:
    • 2 lbs (about 1 kg) ripe fresh tomatoes (Roma, San Marzano, or other ripe garden tomatoes), peeled, seeded (optional), and crushed or roughly chopped
      • Alternative: 1 can (28 oz / 794g) good quality crushed San Marzano tomatoes for convenience.
    • 2 tablespoons extra virgin olive oil
    • 1 medium onion, finely chopped
    • 4-5 cloves fresh garlic, minced
    • 1 teaspoon dried oregano
    • 1/2 teaspoon dried basil
    • 1/4 teaspoon red chili flakes (optional, for a subtle kick)
    • 1/2 teaspoon sugar (optional, to balance tomato acidity)
    • 1/4 cup fresh parsley, chopped (for stirring in at the end, optional)
    • Fresh basil leaves (for garnish, optional)
    • Salt to taste (start with 1 teaspoon)
    • Freshly ground black pepper to taste
